The grandkids are asleep, having worn themselves and me out from play and testing the limits. The older one almost beat me at chess. They`ll stay on for a few days and we will take them to theme parks, before returning them home to face their schooling next week. Everyone is healthy and doing well. So much to be happy about – with Trump being the only known and dreaded disaster winding its way toward us this new year.

Fireworks, for personal use, are illegal in Australia. However the Greek fellow, five doors away somehow got his paws on lots of very very large fireworks. New years eve celebrations started at 6pm with non-stop loud disco music, followed by Greek singing & dancing and bouts of fireworks displays. By 11pm three elderly Greek blokes, all wearing fishing captain caps were singing and dancing on the dining room table, smashing plates and every time one fell off he would stumble over an let off another large firework, then get back onto the table.

I can't say it was sensible behaviour, but it was a lot of fun.

Yay!!!

I rediscovered Fishing Simulator 2!!! It's a bit of a pig to set up (well, bits of it are), but it's realisticish. If you, like me, stopped fishing as a teenager, it recreates some old fun times. These days, it's totally free. It's for Windows (I know - you all wanted to know that) but it also runs happily in L***x under WINE. Venues and species from all around the world for a quick download.

Not an advert - honestly - just good fun for free, so well worth the cost. Look for fishsim.net and away you go. I was late going to bed last night this morning.

Damn... I`m gone for two weeks or so, and only one of ya has had a mind blowin` girz oilin` experience during that time?

Well, I`m back... sort of. Just having received my repaired PC, with a shiny new hard disk a-grinding away inside. Since they put a hole thru the old one, I needed to restore links, documents, etc. from a backup - and that all went well. Woot! Plus, I haven`t had to listen to your whining over that pussy `agrabbin fake president most of you have - though I am sure I will still get an earful as I wade thru the backlog of posts over the next few days.

One of those gone weeks was spent in Taiwan - on a tour, mostly by bus, which started in Taipei and circled the island. Good times - but the food went from a dogs` breakfast to very good indeed. Actually, some of it I am sure my dog (if I had a dog) would have had him `achawing at my neck - it was that bad. Bummer. But the scenery made up for it, along with getting to see some aspects of their culture. If I ever do it again it won`t be with a tour, but rather on my own so I can linger where I want and not get taken to so many duty free shops. Damn, maybe this should have been in the `agrindin thread….

We just finished processing 20 gallons of lemons – washed, used a potato peeler to harvest the better strips of the peel, and then juiced the pulp. Most of the juice was bottled and frozen for lemonade come warmer weather, but the sliced peels and some juice was turned into lemon marmalade.

I love marmalade. Any secret you can share?

I make my own chutney because it is so expensive in the store and so cheap to make. A close cousin of marmalade. New fresh crop of Mangoes and Limes are in the store..................

Chuck 4 whole lemons in a blender with a cup of water, blend the absolute {!#%@} outta that crap, mix in a pound of sugar, simmer with lid on for a couple hours replacing water as needed (or chuck it in a pressure cooker for 15 minutes), and pour it into sterilised jars.

Not sure I have any unique tips for marmalade – but there is one step I do that isn`t common, when making the lemon juice. I double `squeeze` - that is, I first use a standard electric rotary juicer, where I hand-hold the half lemon. The pulp with seeds - and the juice, is then put thru a separate juicer which uses pressure to squeeze that mix thru a fine strainer – giving me `homogenised` juice. Seeds, thicker pulp, etc. - all expelled.

On the marmalade – I use the `thin slice` option of the potato peeler (before juicing above), such that I only obtain yellow rind – without any of the white under skin of the peel – that white portion being bitter. These thin slices are then ground using an electric food processor grinder, giving me very small strips and bits – which are then added to some sugar and an amount of lemon juice that equals the now ground rind. All the cooked to a near boil before putting in sterile jars and `hot bath` heated to a boil before sealing the lids. Once out of that bath, the jars are left to cool upside down, so that the rind pieces do not all settle to the bottom, and once cooled the jars are then set upright so that the rind does repopulate the now thick jelly.

An alternate use for the rind is to process as above – grind finer, but add no sugar and no juice – careful not to burn by using a double boiler, resulting in lemon rind bits that can be used for lemon cheese cake (adding it to the graham cracker base), etc.

My lemons are thick skinned – Lisbon lemons, which have spikes on the limbs which damages about 25% of the fruit. So I generally pick the lemons as they ripen and give away those which are perfect, holding back any damaged fruit to be juiced or turned into marmalade.

We moved out of Tokyo about seven years ago, and at that time I started to plant fruit bearers as I found a spot either among, or to replace, the hundreds of ornamentals which were already on our place. I didn`t learn until about three years ago, as I made friends with local farmers – that in farm country, the local home centres and nurseries are supplied by the local farmers as a condition for them to open their stores. And of course, the farmers, not wanting any competition – restrict what they offer to non-commercial varieties.

The same holds for seeds, but of course these do come from seed companies – which are in cahoots with farmers, so anything that is off the shelf is not the best. So I buy my seeds at farmer supply stores, and even there I don`t buy what is on display, but rather ask for the variety I want by name, and they fetch it from behind the counter.

So the lesson I learned – is do your research and order from a reputable supplier, knowing the variety that you want. I learned this the hard way with lemons, pomegranate (turned out to be ornamental), and grapes (fruit was way tiny). I tore out my four year grape vines three years ago and started over.
