Two days ago, I tried to make fudge. It didn't get hot enough, so it ended up being more like grainy frosting.

Yesterday, after buying a candy thermometer, I once again tried to make fudge. This time, to get it hot enough, I turned up the element. Burnt a layer right onto the bottom of the pan, about half an inch thick, that took me seven hours to remove. Seven. Hours. I filled the pot with water, gently warmed it on an element, then scrubbed and chipped away at it. Eventually it started to crack, and I could chisel pieces off. Seven hours!!

Tonight, I'm going to try to make fudge. I will bring it to a boil, then reduce the temperate below the burning point (I hope), and allow it to simmer and slowly come up to temperature. (Books and websites tell me I need it to reach a temperate of between 234°F [lowest I've found] and 240°F [highest I've found]. Even burning the pot, I only reached 230° F.)

Posting about it in this thread is the only thing I've done right so far.

None of it got eaten. The stuff that didn't turn to concrete in the pan somehow managed to taste exactly like a burnt mixture of cocoa, milk, and sugar.

Yeah. I learnt about it in junior high school cooking class, and then again in high school science class when our teacher showed us how to make chocolates. (It was a standard "experiment" that she did every year, and every year there were parents complaining that she wasn't teaching "science" when she did it. They probably could have used a refresher course on chemistry.)

I have a cowbell - cracked, but brazed by me in 1960 or so - my first experience, under the watchful eyes of an expert. It graced the necks of `Old Suzie`, `Brownie`, and a few more milk cows, back in the day. Now it graces a peg in my barn and reminds me of days gone by.
